What's for Dinner? Lasagna Cupcakes








I love it when a recipe turns out great for the whole family.  It is really easy to please my oldest, mostly  easy to please the youngest  and hard to please my middle girl.  But, I think she was the first to say it was yummy.  Win-win!!

Spaghetti sauce, 1-2 cups
3/4 lb ground beef
12 wonton wrappers
8 oz shredded mozzarella
3 oz Parmesan cheese
4 oz cottage cheese 
I added 1-2 cloves minced garlic

*you can use ricotta cheese, but I always use cottage cheese to make lasagna*

These were so easy and yummy to make. 

Brown your meat, season with salt & pepper, add minced garlic & spaghetti sauce

 Preheat oven to 375.
Spray your muffin tin with cooking spray.

I cut wonton wrappers into circles (using a glass) and placed them into a greased muffin tin.
  
This time I ended up using my Pampered Chef sandwich press, the mason jar lid wasn't working too well.

After cutting, place wonton wrapper in greased muffin tin


Layer Parmesan, cottage cheese & mozzarella cheese

Layer browned beef on top

Add another layer of Parmesan, cottage cheese & mozzarella

One more layer of beef, mozzarella & top with Parmesan

Bake for 20 minutes at 375.
Cool for 5 minutes before serving.

I should have let them sit a little more before serving, only one turned out looking like an actual cupcake.
The rest were blobs.
But blobs taste just as good.
We were hungry.
