What's for dinner?


We all ask the same question, "What's for dinner?"  I go in spurts where I really enjoy planning my meals and cooking.  I find I am more excited to cook if I already have everything planned out.This doesn't always work though.  But when I do, the week runs much smoother.

Today, I asked my little "K" what was for dinner.  I sometimes tease her that she has to cook dinner, she doesn't like it.  But this time she came up with "what about that chicken in the crock pot that we all like?"


Perfect!!!!!     And..... I had all the ingredients.
I love crock pot meals on dance nights.  When we come home in the evening, dinner will be all ready.

So, off I went, got out the crock pot, put in frozen chicken breasts, can of rotel, can of corn, packet of ranch, seasonings and some minced garlic.  I stirred it all up, added a block of cream cheese on top & Voila.  All DONE!  Ready to cook ALL day.
All I have to do when I get home is shred it in the crock pot and serve with tortilla chips and cheddar cheese.
Easy Peasy!!!

after it is stirred, add in the cream cheese, put the lid on and DONE!!

Hubby loves to add Mexican rice to it, which is funny since he isn't a big rice fan.
We eat it that way the first night, but for leftovers, I will fry up some corn tortillas and eat it with Salsa and cheddar cheese.
Or serve with soft flour tortillas as Miss K likes it.


I am bummed my pictures didn't turn out all that well.  I will get better ones next time & update it.
